Soft white bread

READY IN:  1 hr 20 mins YIELDS: 1  loaves INGREDIENTS 2 1/2 cups all purpose flour / white bread flour ( 300+ 100g)  1 tablespoons yeast (or 1 x 7g ) 1 teaspoons sugar 1/2 teaspoon salt 1 cups  warm-hot water (45 celcius) 30g milk powder (optional) 1 ⁄ 8  cup  cooking oil Put 2 cups (300g) flour, yeast, sugar, salt into a large bowl.  Pour in hot water and oil and mix until it combined. It will be sticky. Add the remaining flour (~100g) in increment until the dough is no longer sticky.  HKnead about 5 minutes until dough is elastic and smooth.  Put the dough back into the large bowl and cover with a damp tea-towel and let it rise until double it’s size~ 1/2 hour. Punch it down. Roll piece long enough to fill oiled loaf pan and leave it rise until the dough has reached the rim of the pan.  Bake at 200 celcius for 40 minutes. May coverage layer with aluminium foil to prevent crust.  Rub hot bread with water and wrap with tea towel to ‘sweat’ to soften the crust.
